Single portion tiramisu: recipe and preparation
250 g mascarpone
70 g sugar
30 g water
2 egg yolks (medium – 34 g)
3 cups of coffee (Moka)
100 g ladyfingers
to taste unsweetened cocoa powder

First prepare the Moka coffee (3 cups) and let it cool completely.

Place the egg yolks in a bowl and whip with an electric whisk together with 10 g of sugar.

In a saucepan, combine 60 g of sugar and 30 g of water. Place on medium/high heat, without stirring. Bring the syrup to a temperature of 121°C (no more, otherwise the sugar will begin to caramelize), checking the temperature with the kitchen thermometer.

Pour the syrup slowly over the egg yolks, with the whisk moving. Blend for approx. 10 minutes, to let the mixture cool.

Also add the mascarpone, drained of its whey, in several batches and mix with the whisk.

The tiramisu cream for the spoonful tiramisu is ready! If you’re wondering, no, I don’t add whipped egg whites. I much prefer the cream without the egg whites. Seeing is believing!

Add the mascarpone for the single-portion tiramisu
Now you can immediately compose the tiramisu single portions and your mini tiramisu.

Place a little cream on the bottom of the glass. Break a ladyfinger in half, soak it in coffee and place it in the glass.

Cover with a layer of cream, then 1 broken and soaked ladyfinger and the cream. Level the surface slightly with a teaspoon.

Complete the other tiramisu in the glasses in the same way.

To better distribute the cream, I use a piping bag without a nozzle, with the tip cut to 1 cm. It is not strictly necessary, you can also use a spoon.

Place the tiramisu in the glass in the refrigerator for 1 hour, then you can serve it sprinkling it with bitter cocoa.
